The Story of Sour Beer

Before modern sanitation, all beer was sour to some degree. Belgian Lambics, spontaneously fermented by wild yeasts in the Brussels air, represent one of the oldest continuous brewing traditions in the world, dating back to the 13th century.

German styles like Gose (salty and tart, from Leipzig) and Berliner Weisse (Napoleon's "Champagne of the North") have been revived by American craft brewers, who add everything from passion fruit to jalapeΓ±os.
